Caramel Cheesecake

 Masa Father's Day hari tu tercari2 nak buat kek yang belum buat. Finally, I decided on Caramel Cheesecake. Resepi Yani myresipi with a few adjustments. Serious sedap. Even my family cakap sedap. Adik yang tak berapa suka cheesecake pun makan gak.

Caramel Cheesecake


Happy Father's Day Ayah, Papa & Abah..


Bahan-bahan ( 18cm )
Krim
250g cream cheese - suhu bilik
3 biji telur
1cwn(200ml) sour cream - ( I used plain yogurt )
1cwn(200ml) fresh cream
120g gula
2 sudu besar corn starch
beberapa titik vanila esen
I added 2 tbs condensed milk.
Lapisan bawah
100g biskut marie/ graham cracker
50g butter(cairkan)
Caramel
1/4 cwn(50ml) fresh milk
80g gula

Cara-cara
Masukkan biskut ke dalam beg plastik. Ketuk-ketuk dengan kayu pencanai sehingga hancur. Masukkan butter dan ramas sehingga jadi berketul
Masukkan biskut ke dalam loyang. Tekan padat-padat biskut tadi.
Sediakan karamel. Masakkan gula dengan 1 sudu besar air sehigga perang. Padamkan api. Kemudian masukkan fresh milk. Ketepikan
Pukul cream cheese sehingga jadi bentuk krim. Masukkan gula -> esen vanila -> sour cream -> telur -> corn starch -> fresh cream ikut turutan sambil dipukul. Pukul sehigga jadi bentuk krim.

Tuangkan krim ke dalam loyang. Letakkan karamel di atas cream tadi.

Bakar selama 30 minit pada suhu 200C dan turunkan suhu kepada 160C. Bakar lagi selama 30 minit. untuk mengelakkan hangus pada permukaan bolehlah letak aluminium foil selepas 30 minit pertama. Bakar secara double-boiler dgn meletakkan air suam di dalam dulang.

Note: I put the caramel after baking for 30 min. This way, caramel tak mendap ke dalam cake.

Adik is 6

 Adik's birthday celebration was an impromptu affair. We decided to do it that night coz our family would come over that night. So, I had around 3 hours to prepare the food including the cake.. We celebrated a day early. Thank you for those who came over to her birthday celebration. We have mak & ayah, Ila & family, Abang Ari & family, K.Liza & family, Ismadi & family.

Baby' s 4th Birthday

Nowadays, Baby wants to be called ' Bay'. Ni kira shortform baby le. She said she's Bay while Airis is By ( bi )..lol. Apa-apa jelah.. So now we started calling her 'bay' coz if we called her baby, she immediately corrected us.

Adalia's birthday is on 23rd Nov. We celebrated her birthday together with Hubby's majlis kesyukuran on the new biz. I wanted to buy Secret Recipe's choc indulgence. But the princesses requested for a cheesecake. Since I tak sempat buat cheesecake, I bought SR's choc cheesecake and managed to bake a chocolate cake. Tapi SR's choc cheesecake tu dry le pulak..:-( I think I could make better cheesecake. Tapi due to time constraint, terpaksa le telan je. Tapi macam tak puas hati le. Dah la presentation tak cantik!

Alysa & Ayra's Majlis Konvokesyen & Kecemerlangan

 Last Sunday on 4th Dec, Alysa & Ayra's kindy held their convo. Alysa had been practising for her performance for over a month. She still had to attend her practices even after school holidays started. She had to go to school as early as 7.30am and got back after 4pm when they had to practise at other branch. By the time she got back home she was really flat. Sometimes slept at 6pm until the next day. But she was an early riser. She'd woke up at 5am! Watching cartoons by herself... and got ready to go to school by 7 am.

On the convo day, Hubby had to send Alysa to Politeknik Permatang Pauh as early as 10am. The convo actually started at 2pm. I was worried Hubby would fall asleep while driving coz he only had 1 hour sleep the nite before as he had a day trip to KL the previous day. But, he managed to send Alysa safely.

 The convo started at 2 pm and we arrived just in time. But, we had to sit at the back as many parents were there earlier. The graduating kids were from 5 branches. There were over 300 kids to be awarded that day. Alysa got 2 awards i.e her graduation & best in academic for 6 y.o. Ayra got 2 too..best in academic & iqrak tertinggi for 5 y.o. I was so proud of them as they were among the best out of nearly 300 students ( to be exact ; 262 six y.o and 295 five y.o ). Rasa macam sebak lak..hehe.. Anak baru graduated from kindy, mama emo la pulak!!haha..

 Alysa was involved in a performance too. They performed " Hambamu " . She looked confident & dah macam anak dara lepas kena solek by the teachers.. All in all, it was a day to remember . However, I wished I had a DSLR & photography skills to capture their best moments.Hmm..Lagipun tak menang tangan I sorang yg ambik gambar coz Hubby pening2 lalat tak cukup tido. So, he was stuck at his chair..:-( . Oh..Their tok & Baby were there too to share the big moments..

Biskut Raya 2011

 This year I sempat gak buat a few biskut raya. Actually, terpaksa buat sebab bahan2 dah beli. Kalau ikut mood Baby Airis mmg tak boleh buat seketul pun kuih raya. Ada sekali tu masa tengah buat Biskut denmark, siap dia duduk atas riba lagi. Tak boleh tinggal sorang2. Asyik nak melekat je. Now dia dah boleh merangkak, mmg le dia akan ikut je sendiri kalau tak angkat dia..

 Alysa & Ayra rajin je nak menolong buat cookies. I let them help with Biskut Denmark & Biskut Nestum. Suka hati je dapat gentel kuih2 raya & dapat letak cherry..:-)

Bahan-bahan ( 100 biji )

450g tepung gandum
1 biji telur
250g mentega
115g gula halus
110g gula perang
100g chocolate chips
3 sudu besar cocoa powder ( I lebihkan for more chocolatey taste. 5-6 sb )
250g gajus(panggang dan cincang halus) ( I used ard 200gm )
1 sudu kecil baking soda

Cara-cara

1. Pukul mentega dan gula sampai kembang
2. Masukkan telur dan pukul lagi
3. Masukkan tepung+baking soda yg telah diayak, sedikit demi sedikit dan juga chocolate chips dan kacau
4. Masukkan gajus dan kacau lagi
5. Buat bulat kecik-kecik dan tekan dengan garfu atau apa-apa bentuk yang disukai
6. Bakar dalam oven pada suhu 160C selama 15 minit

Note: Next time I'd reduce the sugars. A bit too sweet for me. The princessess love this cookies. Habis 2 balang diorang kerjakan. I had to make another batch but using K.Fida's recipe. Tapi doh terlembik kut coz it turned out a bit flat.

Biskut Nestum Simple

Bahan-bahan

250g butter
1 cawan  gula (130g)
2 biji kuning telur
2 cawan nestum keluarga dgn madu (yg biasa pun bleh)
3 cawan rata tepung gandum (300g)& 1 sudu teh baking powder - diayak
lebihan nestum & ceri utk hiasan

Cara-cara
1. Putar butter dan gula hingga kembang. Campurkan telur satu persatu sambil diputar 15 saat.
2. Campurkan tepung berselang seli dgn nestum. sambil diuli perlahan hingga mnjadi satu doh yg lembut. Berhenti menambah tepung jika doh sudah elok lembut. (biar ia nmpak lembik skit, coz kejap lagi ia akn mengeras)
3. Ambil sedikit adunan, bulatkan sebesar ibu jari, leperkan sedikit, lalu ditekan ke atas lebihan nestum. susun atas dulang yg dah disapu butter/majerin.
4. Hias dengan ceri.
5. Bakar pada suhu 180C selama 20-30min.

Note: Next time, I'd reduce the sugar. Too sweet..but nice.

Sambutan Raya 2011

 Raya this year turn Johor, tapi nyaris2 raya kat Kedah dulu cos Baby Airis tak sihat. A few days before raya she started having runny nose. We planned to go back to Batu Pahat on monday, a day before raya. Tapi pagi tu nampak dia dah nak start wheezing. Hubby suggested kitaorang raya Kedah dulu, then on 2nd raya balik Johor.

  Barang2 dah prepare untuk raya kat Johor...Lepas tu klau raya kat Kedah dulu, 2nd day dah kena balik Johor. So, I tak nak la coz mcm tak puas raya Kedah sehari je. Then, we would miss the open houses held by relatives in Kedah which started on 4th raya. So, tawakkal je la balik Johor lepas bagi Baby Airis syr ventolin. Alhamdulillah, she was ok during the journey. The weather was ok too. Jalan pun lengang je except for heavy traffic kat Seremban as usual.

By the way, masa dah bertolak baru sedar Baby Adalia terlupa bawak kasut baru. Dia pegi sarung kasut buruk Ayra. Sampai je Sri Medan at 9 pm, we stopped by to buy her new shoes. Nasib le kedai bukak lagi. Kalau tak, beraya le dengan kasut buruk tu,,:-)

Day 1: Lepas solat raya, buat doa selamat as usual  kat rumah. Then, sesi bergambar & makan2. After makan ketupat & the dishes prepared by mak & Kaseh, kitaorang beraya ke Sri Menanti. Balik tu baru beraya kat sedara2 dekat2 rumah mak.


Day 2: Beraya kat rumah2 sedara yang tak de kat rumah on day 1. Lepas tu tunggu je kat rumah coz diorang dah start barak hari ni.

Day 3: Yeay..Balik Kedah. Plan awal nak singgah rumah kawan Hubby kat Bangi. Tapi dia belum balik dari Kg. We ended up kat Melaka rumah atuk Ain. Cantik rumah atuk Ain. Bestnya dapat jumpa my "ner" ni after 21 years tak jumpa. Masih maintain je macam dulu2. Dapat le jumpa hero2 dia. Siap dapat bawak bekal wajik durian & asam keping homemade. Thanks Ain di atas layanan hari tu. Panjang umur jumpa lagi..


Day 4: Hari ni dah start open house. Kitaorang ke rumah mak chaq, tok lang, mak chum, pak kechik, Ngah, Pak Su , Bang Lan & Mak Yang. Berjalan sampai 12.30am. Balik tu mmg letih sungguh. Nasib the princessess tak buat perangai. The food served mmg marvellous. Seronok dapat jumpa sedara mara.


Day 5: Ada lagi open house kat rumah Ila & kay'en. Nasi dagang & Soto indon. Rajin betul Ila buat open house dgn tgh preggie. Hari tu buat majlis berbuka. Nak dapat Baby girl kut..;-). Balik rumah Ila terus balik Penang.

Day 6: Open house cum aqiqah kat rumah taniza. Roasted lamb marinated by chef kat hotel kat SP. Alysa pulun lamb tu rasanya ada le 3 pinggan. Suka betul dia..

Open house kat taman ni belum start lagi coz mostly beraya kat kg. Rayanya akan start soon. Rasanya belum terlambat nak ucap " SELAMAT HARI RAYA, MAAF ZAHIR BATIN. "

Ayah's 70th Birthday @ Puteri Ayu Chalet

 Happy 70th Birthday Ayah. Semoga sentiasa dilimpahi rahmatNya dan diberi kesihatan yang baik. We love you.

For this birthday, kitaorang buat kat Puteri Ayu Chalet, Yan, Kedah. The photos in their website didn't do justice to the place cos it's much better in real life. Bak kata Ila, indah rupa dari khabar..:-). Actually, we found this place while searching to do our family day last month, but it was fully booked then. Yelah masa tu dah last minute booking & school holiday too.

This time we had the whole place to ourselves. I managed to join the group only on Saturday. Now pulak tengah musim buah kat Yan. So, everywhere ada jual manggis, rambutan & durian. Kat chalet tu pun ada pokok2 buah. Nak parking pun kena gak tgk2 kat atas, takut buah jatuh atas kereta..:-). Kat sini pun ada air terjun which makes the place cool & cozy. The place is very nice indeed but kat dalam chalet tu tak payah le nak expect like a 5-star hotel.;-). It's a good place to bring the family to experience kampung-style ambience.

Anniversary

 Last nite Hubby tanya " u nak makan ke or nak somewhere romantic?" :D. Apa le punya soklan..Actually, he was referring to our anniversary dinner. Since I pun lapar coz I only had ABC for tea, we decided to go to somewhere near & tak yah tunggu lama utk makan. Just the 2 of us. The princesses tinggal dgn Cik Jun. This year tak boleh masak special coz dapur tak siap lg..Huwaa..dah 3 minggu dapur tak berasap! Tp dah in final stage.

Kitaorang ke this Chicken Chop restaurant in Teluk Air Tawar. Dah a few times nak try sini tapi tak berkesempatan. Since I tak nak dissappointments on my first visit here, we didn't order western food. Dah a few times makan western food at various cafes & restaurants yg I rasa dissappointed with the quality of food. I ordered Char Hor Fun, & Hubby tried their Nasi Goreng Mak Tok. Both sedap with good presentation. Tapi since I mmg tgh kebulur masa tu, I ordered mihun sup pulak. Waiter tu tanya take away ke? Heran kut tgk org kurus je tp makan 2 pinggan. haha..

We tried to get home early coz the princesses ada exam hari ni. All in all the food here is yummy & the ambience is nice. Suitable for dining out with family. Service pun cepat. Rasanya 1/2 hour kat situ I dah siap order & makan my 1st dish eventhough orang tgh ramai masa tu.

To Hubby, Happy 12th Anniversary. Thank you for always being there for me.

Eating out & mother's day

 Dah 2 minggu dapur tak berasap. Home renovation is still ongoing. Main works dah habis. Tinggal nak pasang tiles, grills, mengecat & a few things. Kitchen kabinet pun nak kena buat lain. Yang lama tu mmg dah tak masuk dlm theme. Yang dah dibuat rangka pun kena roboh gak coz orang yg pasang tiles ni kata tak sesuai! Kena buat lain.. ( Ke the new contractor ni nak dpt job?..Hmm). Hubby had sleepless nights coz dia paranoid rumah tak bergrill lagi. Sampai termimpi2 org masuk rumah. Rumah punya le berabuk. Kesian Baby Airis & Adalia sampai selsema.

 In the meantime, we have been eating out for some time. Dah tak tau nak makan apa. Baru realise kesian orang yang beli kat luar who have to put up with what were being served to them. Makanan dah le mahal lepas tu tak sedap pulak tu. Like last nite, Hubby tapau chicken chop ( I dah tak kuasa nak makan kat kedai ). Dia punya coating punya le keras ntah tepung apa dia guna. Alysa terkial2 mengunyah. Chicken tu pulak ada le besar 2 jari ( dah jadi macam keropok coz liat ), Coating dia yang menyebabkan chicken chop tu jadi sebesar tapak tangan... This is just an example. Food yang lain tu makan bukan utk enjoy, tapi tak bagi kebuluran je.

 Last sunday, lepas Alysa & Ayra's sports day kat Politeknik Sbrg Prai, Hubby met us up at Jusco. Punya le ramai manusia. Pakat celebrate kat Jusco le gamaknya. After lunch, tgh pusing2 kat Jusco, I received a call from my friend's hubby. Dia bgtau Z dah bersalin. Ada complication. Rahim dia pecah. Terkejut le I coz she was supposed to deliver in July. Memula doktor kata both mama & baby tak de harapan. Kalau ada pun 30% je. Alhamdulillah, both mama & baby are stable now. Tapi baby kena refered to a govt hospital. When I visited her yesterday, she was almost her usual bubbly self. Siap dah bangun berjalan only after 48 hours op. Kes dia punya le teruk sampai anaes kena bius dia sambil duduk coz she couldn't lie down. Dah tak boleh bernafas sbb darah dah sampai kat lungs dia. She was transfused 9 pints of blood.

 Another mother pulak, dia bersalin kat private hospital. Baby dia breech. Masa bersalin ada complications. She was referred to a govt hospital. Now dah berbulan dia coma. Both kidneys dah rosak. She is resistant to all antibiotics except for 1.

 In many cases, mmg ibu2 bertarung nyawa nak melahirkan anak2. Tak kira normal delivery atau ceaser. To my dear mak, Happy mother's day. I love you forever. May Allah bless you always and grant you jannah.

Airis Sara

Airis Sara was born 0n 1st Dec 2010 at 11.27am, weighing 2.94kg, length 50cm.

 Yesterday on her 9th day, kitaorang buat majlis aqiqah & majlis kesyukuran. Pagi tu buat cukur rambut. Since ni anak yang last, Papa cukur sendiri rambur Airis. Over 2 hours le jugak nak mencukur tu, coz seriau kut cukur rambut anak sendiri..:-) Nak tekan kuat2 shaver tu takut berdarah le pulak kulit. As usual, 'belah mulut' was done by Ustazah Marziah, macam the other princesses. Tapi diorang, ustazah yang cukur rambut gak. This time dia supervise je cukur rambut tu. Last nite pulak, pusat adik baby dah tanggal. A bit lambat dari the other princesses i.e 7 days.
 Jemputan kenduri lepas Asar. Lepas Asar tu ada bacaan yaasin. Ramai jugak yang hadir. Penuh living room sampai ke porch. Tetamu yang datang utk kenduri pun mmg ramai. Kitaorang buat kambing as aqiqah. Last tatamu balik after 1.30am! Ni sedara- mara la yang leka berborak. Sekali-sekala jumpa. Thanks to all yang sudi hadir memeriahkan majlis.

Raya Haji & Carrot Cake

 Raya Haji as usual tak le semeriah Raya Puasa. Tapi juadah raya mesti ada. I malas nak buat kuih raya. Just made Carrot Cake & Kek Kukus Coklat utk bwk blk kg. Carrot cake tu malam raya dah selesai. Dihabiskan oleh anak2 sedara. Resipi CMG . Thanx Cik Mat. Kek Coklat tu sempat simpan utk raya. Tapi lupa amik gambar.
 Mak  sediakan ketupat palas, masak anga, kari daging  & daging masak wira. Juadah wajib dihari raya. Raya kali ni Ila rajin nak sediakan bihun soto utk tetamu. Habis anak2 sedara kena kerah tenaga tolong prepare bahan2. Tapi hasilnya mmg marvelous. By petang raya, habis soto seperiuk besar. Bergedil tak sempat pun jamu kat tetamu. Resepi Indon mari..
 Kitaorang beraya ketempat biasa. Dijamu juadah2 berat. Alysa simpan perut sampai we all ke rumah Kak Dah aka tokey bihun sup. Sampai menghirup pinggan dia pulun..:-). By this time kitaorang dah kekenyangan dgn ketupat, soto, laksa, & mee kari. Tapi Alysa tak jamah sume tu. Nak tunggu bihun sup agaknya..The final house dapat makan tapai pulut. Mmg sedap!

Carrot Pound Cake


BAHAN-BAHANNYA :

125 g mentega
1/2 cawan gula halus
1/4 cawan gula perang (brown sugar)
1 1/2 cawan tepung naik sendiri (self-raising flour)
2 biji telur gred A
1/2 cawan whipping cream (kalau tak de boleh ganti dgn susu cair)
1 camca teh esen vanilla
3/4 cawan parutan lobak merah
1 genggam isi kacang pistachio, cincang kasar (jika suka)

CARA MEMBUATNYA :

1. Panaskan oven pada suhu 175C. Lenser loaf tin berukuran (9 x 4 x 3.5) inci dengan mentega, alas dasar tin dengan kertas minyak, lenser kertas minyak tadi. Ambil 2 camca besar tepung dalam resipi tadi dan gaul dengan lobak parut hingga rata. Ketepikan.
2. Putar mentega bersama gula halus dan gula perang hingga putih, masukkan telur satu persatu dan terus memutar hingga kembang dan gebu. Pada kelajuan sederhana, masukkan esen vanilla diikuti terpung berselang seli dengan whipping cream (atau susu cair), hingga habis, kacau rata.
3. Tambah lobak merah dan cincangan kacang pistachio. Gaul sebati. Tuang dalam tin tadi dan bakar 1 jam atau hingga masak.
